Seafood variation of the basic Risotto recipe
8 King Prawns, peeled raw prawns work best
50 gms Smoked Salmon
100 gms White fish fillet of your Choice (kingfish, flathead or blue-eye cod)
1/2 kg Mussels, poached Mariner Style and removed from shell
1/4 bunch Fresh Dill - chop some and reserve some for garnish
In a hot Sauté Pan gently sauté the Prawns & white fish when half cooked add the Mussels (including Moules Mariner stock) and Mix with basic Risotto recipe add the Smoked Salmon and chopped Dill. Season and serve straight away, garnishing with picked fresh Dill.
Note - your own preference of Fish can be used and variations of this recipe are unlimited!
