Cajun spiced Pumpkin & Mushroom Risotto
Difficulty Factor: easy addition to the basic Risotto.
Cooking Time: 25Minutes ( this can be done while preparing the basicl risotto mix
Serves: 4/5 ( some left over for Risotto cakes )
1 batch Basic Risotto recipe
100 gms sliced Button Mushrooms
100 gms Shitake Mushrooms
1 Butternut Pumpkin
Add the Mushrooms to the basic Risotto recipe at the first stage when you are cooking the Onions and Garlic.
Peel and remove the seeds from the Butternut Pumpkin cut into 1 inch dice, season with Cajun spice, Olive Oil, Sea Salt and Mill Pepper.
Roast the Pumpkin in a very hot oven 210deg. until the outside is crisp and brown and the middle is soft.
Mix the roasted Pumpkin into the Risotto when ready to serve.
